This is an easy recipe that I save for those "I don't feel like cooking...or cleaning" nights. It's simple, yet satisfying. I served with lettuce wraps and a side of green beans. Keith whipped up a quick sauce using spicy and regular mustards, and heavy cream.
Kathy's Parmesan Tuna Patties
- 2 (6 oz) cans tuna, drained
- 2 TB full fat mayo
- 2 eggs
- 1/2 cup grated parmesan cheese
- 2 dashes garlic powder
- 2 dashes onion powder
- 2 dashes salt
- pepper, to taste
Place all ingredients in a bowl and mix well. Heat oil in a skillet over medium heat. Form patties (1/4 cup each works well). Place in hot skillet, lightly pressing with fork. Fry a few minutes in oil til brown on edges. Turn. Fry til done. Makes 6-8 patties.
