This recipe is a huge hit in our house! We've already made three batches in less than a week! It goes particularly great with
meatloaf...an awesome combination! I found the original recipes for both
here. I used the Brussels sprouts I bought at
Costco, which were only $4.29 for 2 lbs (enough for 2 batches). Just one serving (5 sprouts) has 120% of the RDA of Vitamin C! My husband also noted these weren't bitter. And to hear my 2 year old ask, "Mom, may I have more Brussel sprouts?" just warms my heart! We LOVE them and hope you do as well!
Baked Brussels Sprouts
- 5 slices thick bacon
- 1 lb fresh Brussels sprouts
- extra virgin olive oil
- pepper
- salt (optional)
Preheat oven to 350°. Cook bacon and roughly chop. Steam the Brussels sprouts for 4 minutes. Remove thick stem and quarter the sprouts. Add bacon and sprouts to a large glass baking dish. Season with pepper, to taste, and drizzle liberally with EVOO (Remember: fat is not the enemy!). Toss to coat and bake for 30 minutes, stirring after 15 minutes. Sprinkle with salt, if desired.
