This is another simple recipe for an easy night of cooking and cleaning, very similar to my
Tuna Patties Recipe. I served on top of raw beet leaves and with a simple side of raw squash/zucchini, lightly tossed with evoo, vinegar, s&p, garlic powder, and parsley. Hope you enjoy!
Salmon Patties
- 14.75 oz can Wild Alaska Salmon, drained
- 1/2 cup grated Parmesan (finely ground pork rinds may be substituted)
- 1/4 cup Onion, finely chopped
- 2 tsp Lemon Juice
- 2 tsp Parsley Flakes
- 1 Garlic Clove, minced
- 2 Eggs, beaten
- 3 TB Mayo, full fat
- 1/4 tsp+ Pepper
Mix all together and refrigerate for 30 minutes. Make into 4-5 patties and cook til browned, turning once.
