I took Keith's recipe for last week's juicy
Bacon Cheeseburgers and incorporated that into tonight's meatloaf. Our grass-fed beef from
Ovis Hill is so lean that we actually have to add fat! If you haven't tried bacon IN your burger or meatloaf, you should! It adds good flavor and juiciness! I served the meatloaf with some chip-like baby eggplants (slice thin, salt n drain bitter juices, rinse, toss with coconut oil, bake 375 for 10-15 mins) and giant white chard (chop, cook in butter, nutmeg, and pepper). I also roasted the one baby squash that had gotten lost with the eggplant. Hope you enjoy!
Bac-in Meatloaf
- 1 lb grass-fed beef
- 4 slices bacon, finely chopped
- pepper
- paprika
- oregano
- onion flakes
- onion powder
- garlic powder
- 1 pastured egg, beaten
Add everything to a large bowl. Mix by hand. Pour into greased loaf pan and form. Bake 350 degrees for one hour.
